Farberware Nonstick Bakeware 9-Inch Springform Pan Review

Farberware Nonstick Bakeware 9 inch Springform PanGenarally a good, durable cake pan, and works well, if the cheesecake recipe calls for a crust, and the usual oven baking.Water leaks in though when the empty pan is placed in a water bath, which a particular cheese cake recipe (no crust) required.Perhaps water might not have leaked in if the pan were already filled with the thicker batter, but I did not want to risk it, and so simply used another cake pan.

Product Description:
This is sturdy, durable bakeware that will stand any cook in good stead through many years of baking. Oversized handles allow a safe and secure grip on hot pans, while the slick surface ensures easy food release. Cleaning is a snap, as might be expected with a piece that is coated inside and out (twice) with silicone polyester non-stick material. So, where is that recipe for Pumpkin Spice Cheesecake anyway?

Frieling 9-Inch Glass Bottom Nonstick Springform Pan Review

Frieling 9 inch Glass Bottom Nonstick Springform PanI bought this springform pan based on the recommendation of several trusted sources, including Cook's Illustrated magazine. (They actually tested the model with handles--had that one been available I probably would have spent the extra money for it, but as it is I haven't found any significant inconvenience to the lack of handles with this model).
Although the quality and construction overall is excellent, the most obvious feature that distinguishes this from other springform pans is of course the glass bottom. I have been VERY impressed with this innovation! It overcomes a couple of the problems I've had with other (especially cheap) pans: the base's rolled metal edge that traps water & crumbs (which makes for quick rusting and difficult cleaning), and the tendency of the bottom to ding & bend, preventing a tight seal with the collar. This model seals very tightly--when I filled mine with water to check it, the majority of the leaking occurred not around the base but through the collar overlap (an inevitable weak point in the system). Batter of course is much thicker than water, and I haven't experienced any leaking problem when actually baking with it.
Baked products don't stick to it (either the base or the non-stick coated collar), and they don't need to be transferred from the base for cutting and serving, because you won't damage it by cutting on it--something all too easy to do with metal bottoms. The rimless glass bottom presents no impediment to a spatula when lifting out nice, neat slices. You can also look through the glass to check the browning of the crust as it bakes.
I do wish they offered other sizes, but if you're only going to have one size the 9" is the most practical. That's what almost all of my recipes call for, and if necessary you can bake a 8" recipe in a 9" pan (decreasing the baking time slightly)--but not necessarily the other way around.
I'm getting over my initial fear of breaking the glass. The truth is, when securely seated in the collar, the glass is quite well-protected. Probably the biggest recommendation for this is the fact that other manufacturers (including Kaiser) are now starting to copy the glass-bottom idea!

Product Description:
Frieling's 9 Inch Springform with Glass Bottom eliminates the tricky task of transfering your finished product to a serving platter. Unlike traditional non-stick springform bases that you cannot cut directly on, the glass base easily goes from oven to table and can work in any table setting. The base also lets you monitor the browning of the cake as it bakes and is dishwasher safe.

All-Clad MC2 Covered Sauce Pans Review

All-Clad MC2 Covered Sauce PansIf you are a serious cook who wants serious quality cookware, then All Clad is a great option. If you are not 100 percent familiar with All Clad, here is a brief description of what you can expect from them...All of their lines have a full aluminum core (which provides excellent heat retention and distribution) and stainless steel interiors (which offer an easy to use, non reactive cooking surface). It is the best of both worlds combined in one piece of cookware. The difference between the various lines of All Clad is simply the exterior surface...stainless steel (obviously their Stainless line), anodized aluminum (the LTD line), Copper (Copper Chef line), Stainless with an added layer of copper in the core (Copper Core), and brushed aluminum (the MC2 or "Master Chef 2" line). They are all, in my opinion, excellent cookware, but each one has its advantages and disadvantages. The advantages of the Master Chef 2 line, which this saucepan hails from are:

1)The brushed aluminum exterior gives it added thickness and heft. In my opinion, this provides better cooking qualities than most of the other AC lines (except for the LTD which is even slightly thicker). While all lines of AC perform beautifully, I feel MC2 has slightly better heat retention and distribution. I enjoy the cooking experience a little more with MC2 than I do with the stainless line.

2)It costs less. I think we all agree that's an advantage!

However the main disadvantage of the MC2 line, in my opinion, is strictly cosmetic. Straight out of the box, the saucepan will look beautiful, but over time, it's exterior will undergo intense marring. It doesn't matter how much you baby your cookware, these pans scratch horribly and discolor very easily. I don't care what anyone says...I have tried every trick in the book to rid my MC2 of their ugly discolorations, and nothing works. And as far as scratches go, once they're there, they are there for good. If looks are a big issue with you and/or you keep your pots and pans on display in your kitchen, bear in mind that these pans take quite a beating. These just will not have the striking beauty of the stainless or copper core line.

As far as this particular saucepan, it's definitely a winner. With the thick aluminum core and exterior, you will definitely enjoy the performance that this pan will offer you. Your sauces won't scorch as easily as lower quality pans and you will find you will have much more control over your cooking with a pan like this. It is certainly a joy to cook in it, as is all of All Clad cookware. And the accompanying stainless steel lid is durable and tight-fitting, everything a lid should be. Do bear in mind that this saucepan is not like a typical two quart saucepan. Most 2 quart pans are wide and short. This pan is tall and narrow. (It doesn't even measure 6 inches across and is smaller in girth than my 1 and a half quart saucepan). The advantage to that is you will get less splatter and less evaporation with a pan of this shape, but to me, the narrow girth of this pan is a distinct disadvantage. I cook on Thermador burners which are very wide. The flame on my burners completely devour this pan and I have to use a medium to medium low heat setting at the most or the flame will lop up the sides of my pan. If you have pro appliances with wide burners, then this will be an issue for you. You will either have to use a low flame or invest in a simmer plate. This fact, along with the exterior marring, is what made this pan lose a star for me. However, if I were to rate this pan solely on performance, then it would earn five stars all the way! Even with the drawbacks, I'm still a very proud owner!

Circulon 9-Inch Metal Spring Form Pan Review

Circulon 9 inch Metal Spring Form PanThis is a pretty good pan, although with 2 flaws.
#1: it is not leakproof, good for cheesecakes but not for liquid desserts (flan)
#2: the removable tray has a 1/2 cm lip that raised, so it's very difficult to remove the dessert out of the tray. I made a flourless chocolate cake, and part of it stayed in the tray. Very messy and not esthetically appealing!
On the positive side, the metal is sturdy and the latch is easy to maneuver, but if I could buy another pan, I would.
