LamsonSharp KnifeSafes Knife Blade Protectors, Set of 4I'll do this one review on all the sizes of KnifeSafes.

I love these things!They're such a great idea.I'm convinced that a lot of people don't give a lot of thought to their kitchen tools.If they did, they would want to use and protect them better.Here's my reasoning behind the KnifeSafe.

Storing knives in the kitchen go something like this.Store knives in a slotted knife block.That block gets dust, moisture, and other debris in it and you won't be able to get it out.They're OK, though.Alternative storage can be as simple as hanging on magnets (if you don't mind magnetized blades).The drawer is probably the most common storage method and I've seen a lot of drawers full of knives, all sitting there next to each other.The problem is that the edges hit other metal and dull.The edges also cut hands in the drawer.Both situations are bad.

Furthermore, for those of us who transport knives to and from events, protection FROM the edge is a must.Our options are homemade sheaths life rolled magazines, flat plastic sleeves, or KnifeSafes.The rolled magazine thing is just asking for trouble.The plastic sleeves are alright but here's the difference...

Flat sleeves contact almost the entire surface of the blade.Worse yet is that the knife rests in it, sitting on its edge.The worst thing is the knife is held in, only by the elastic grip of the sleeve.I've reached for a knife in a bag to find its edge exposed!

The KnifeSafe contacts the blace only by the four rubber pieces that you can see in the picture (two adjacent pair).Not only is the surface only touched by those rubber pieces, the edge is contact free.The clam-shell like contruction snaps around the blade to the other side.The opening is not as wide as the case, so some knives won't even slip out if you can get them to slide in the rubber.I could barely pull a thin paring knife out of the KnifeSafe, so I'm not surprised that I haven't had one slip out.

In the end, I would recommend the KnifeSafe for anyone storing knives in a drawer or anyone who transports (or may transport) blades to and from events.Dinged blades and cut hands are just not worth it when you can spend a few bucks and prevent all the trouble.

Mundial 5100 Series 3-Piece Starter Set, BlackHey there,

I have taken a cooking class maybe half a year ago with the continuing education department of a local college. Part of the class price included a knife set. I didn't think of anything when I got it. Throughout the class I really learned the differences between cheap knifes and really good ones like this. There are more expensive knifes out there, but this knife set and Mundial generally, are a great deal for quality knifes that last. Anyways, my point is, that throughout the last half year I have not been using any of my old knifes. This knife set is all I'm using!!! It is great, safe, sharp. Great design, and user friendly with the weight relations between handle and blade. I love my knife set and would never in the world trade it is again. By the way, I can still not tell any wear and tear. Great product indeed!!!

Global 5-Inch Cook's Knife Review

Global 5 inch Cook's KnifeFor many people it probably is.
I've had this knife for nine years now, and I also have a full set of Global knives, but this little beauty is the one I reach for most often.
Why?
Because it is superbly sharp,lightweight in the hand and well balanced.Unlike those huge kitchen knives you see on tv cooking programmes,this knife is small enough to be easily manipulated, but large enough to tackle all routine kitchen duties. The 5" blade is long enough for almost all kitchen tasks, but short emough to give the user complete control.
Like all Global knives the GS 3 is SHARP !!!.Try chopping up vegetables, or slicing tomatoes or potatoes.The knife just glides through as if the veges were cooked.
This superb Japanese knife is streets ahead of European knives.
To maintain the blade, I recommend using a ceramic sharpening rod, made by Global (or Kyocera, which is cheaper). Every few months the blade will need resharpening.You can do thisyourself, using Japanese waterstones (King, or Shapton,or Norton in grit sizes 1000 up to 8000) and cheap Mino Sharp guides to maintain the edge angle (check my other reviews for more details).
If you can't be bothered doing this yourself,take it to a competent expert knife sharpener and tell him you need a 12 to 15 degree angle on the edge.

addendum:- since writing this review I have purchased other Japanese kitchen knives from japanesechefsknivesdotcom, and the Hiromoto AS carbon steel knives are even better.

Mundial 5100 Series 10 inch Chef's Knife, RedI actually love this knife.When it got here it was a lot bigger than I expected (evidently I don't actually know how big ten inches is) but it works great.It is amazing how much easier it is for me to cut and chop with a knife that actually holds and edge.

Global 7-Inch Deba Knife Review

Global 7 inch Deba KnifeProfessional cook here. I don't use this knife as an all purpose knife. It wasn't intended to be one. I've tried to, but it doesn't work very well as one. It being single bevel, it tends to make the wrist turn while cutting hard objects like carrots, which is why it shouldn't be used in place of a chef's knife. Debas are meant to be used for breaking down whole chickens (not cutting the bones though) and butchering fish (can cut fish bones).

While the Global deba (and all Global knives in general) is very sharp out of the box, it is because of the concave edge they put on it, not the traditional V edge. It stays sharp longer, but without special equipment, one cannot sharpen Globals to the same factory edge with just sharpening stones.

I don't see how Global can really classify this knife as a deba though. It's too thin to be a real deba and rather light. Debas are usually twice as thick and have a tougher edge, rather than the delicate edge on the Global deba. I had to sharpen this knife to a more obtuse angle to use it for its intended purpose because the edge kept on rolling or chipping. Plus, it's rather expensive. There are much better debas out there made with better steels for the same price or cheaper. I applaud Global for being unique in their designs, but function over form is extremely important with knives in the professional kitchen. A deba is meant to be used and abused with no babysitting.
