Global 5-Inch Cook's Knife Review

Global 5 inch Cook's KnifeFor many people it probably is.
I've had this knife for nine years now, and I also have a full set of Global knives, but this little beauty is the one I reach for most often.
Why?
Because it is superbly sharp,lightweight in the hand and well balanced.Unlike those huge kitchen knives you see on tv cooking programmes,this knife is small enough to be easily manipulated, but large enough to tackle all routine kitchen duties. The 5" blade is long enough for almost all kitchen tasks, but short emough to give the user complete control.
Like all Global knives the GS 3 is SHARP !!!.Try chopping up vegetables, or slicing tomatoes or potatoes.The knife just glides through as if the veges were cooked.
This superb Japanese knife is streets ahead of European knives.
To maintain the blade, I recommend using a ceramic sharpening rod, made by Global (or Kyocera, which is cheaper). Every few months the blade will need resharpening.You can do thisyourself, using Japanese waterstones (King, or Shapton,or Norton in grit sizes 1000 up to 8000) and cheap Mino Sharp guides to maintain the edge angle (check my other reviews for more details).
If you can't be bothered doing this yourself,take it to a competent expert knife sharpener and tell him you need a 12 to 15 degree angle on the edge.

addendum:- since writing this review I have purchased other Japanese kitchen knives from japanesechefsknivesdotcom, and the Hiromoto AS carbon steel knives are even better.

Global 6-Inch 15 cm Serrated Utility, Scallop Knife Review

Global 6 inch 15 cm Serrated Utility, Scallop KnifeI bought this knife along with a few other Global knives and ended up returning it.This is not to say that this is a bad knife but I found that it was unnecessary alongside the rest of the Global knives I purchased.The non-serrated knifes are so sharp that there were practicaly no instances where I needed to use this knife.I did end-up keeping the 8" serrated bread knife but as long as you have that one, you don't really need another serrated knives.
I like being able to sharpen my knives frequently and this isn't very easy to do with serrated knives.A special tool and technique is required and the whole process is very time consuming.In addition, make sure that you use a ceramic sharpener on all global knives.Its supposed to have a different grit that is better for them.Kyocera (ceramic knife manufacturer) makes one specifically for Global but they are quite expensive.

Chicago Cutlery 4-Piece Paring/Utility Knife Set with Colored HandlesI have owned Global, Shun (ken onion series), Furi, Ran, Henckles, Wousthof, Chroma, Mac and most recently, got myself a Haiku.I cook professionally, spend my days in a professional kitchen, I have 14 sets of knives ranging from 3pcs to 8pcs sets.I love knives.

So, here is my review of these knives.Good utility knife set.Handles are big enough to fit in your hand, sharp enough to do "simple" cutting, blade is thick enough to stand abuse and they are very light.Rating, Price, quality and performance were all considered as a WHOLE.

Workmanship, I would say, it's excellent for a $4.00 knife set.I can't compare them to my other knives which cost 10x or 20x more than these.But, considering the price I paid for, they are great.I keep them by my side especially the serrated ones.

And I'm just sadden coz, people should know, there is no such thing as "stainless steal" or rust proof knife.They all stain.That's why never, ever put your knives in the dishwasher.Wash them by hand and dry them with a towel.Even with care, with age, you'll notice staining on your knives.Good luck.
