Totally Bamboo 20-1500 South Pacific Collection Square Tonga Light Bamboo Cutting Board 11.5-in.I never really thought that I would ever be so enthusiastic about a cutting board of all things, but these cutting boards are really wonderful. The cutting board that I have from Totally Bamboo is the "Kauai" model, and it has served me quite well. The bamboo is incredibly smooth to the touch, and has shown very little wear for the amount that I have used it. I like mine so much that I have purchased the "Lanai" model for my boyfriend's mother for Christmas. When I showed my own mother the one that I had gotten, she decided to get one to send to my relatives for the holidays as well. Some interesting additional information from the company's website:
"Bamboo is 16% harder than maple wood, 1/3 lighter in weight than oak, yet in some instances as strong as steel. Bamboo holds the promise of a sustainable, cost effective, and ecologically responsible alternative to the widespread clear-cutting of our old growth forests."

All-Clad Stainless-Steel Stockpot Review

All-Clad Stainless-Steel StockpotOK, I am cheating here a bit by cutting and pasting a recent equipment review by the magazine Cook's Illustrated/PBS show America's Test Kitchen.This is a long review, so if you want to cut to the chase, just scroll to the last paragraph before the listing of the individual reviews.

Here in the test kitchen, we have 15 stockpots of varying sizes, and we use them often. Most home kitchens, however, have room for a single stockpot, so it must handle a variety of big jobs-from steaming lobsters and cooking bushels of corn to canning and making huge batches of chili or homemade stock.

So what size is best? After substantial pretesting, we determined that a 12-quart stockpot is the most useful size--it's the "smallest" big pot, meaning it can handle most big jobs yet is small enough to store with your other pots and pans. So how much do you have to spend to get a good 12-quart stockpot? We bought nine basic stockpots (no fancy steaming or boiling inserts), ranging in price from $25 to $325, and headed into the test kitchen to find out.

We boiled water, cooked mounds of pasta (two pounds of pasta and eight quarts of water at a time), prepared two dozen ears of corn, and made double batches of beef chili in each pot. To evaluate the pots, our testers used digital scales, thermometers, stopwatches, gas and electric burners, and plenty of elbow grease. They handled each stockpot extensively to get a sense of its overall feel (both empty and full) and handle design. We washed the pots repeatedly and practiced stowing them away. What did we find out?

SHAPE-SHIFTING: The best stockpot we tested, the $325 All-Clad, impressed us more for what it didn't do--scorch on the bottom or feel awkward or flimsy--than for what it did do; after all, how sexy can a stockpot be, even when it's performing flawlessly? That said, our testers preferred wide stockpots (such as the All-Clad) to tall and narrow ones (such as the Vollrath), as greater width allows you to see and manipulate food better and makes for easier cleaning and storage.

A WEIGHTY ISSUE: The heavier pots (all weighed without lids) outperformed the lighter models. The four heaviest pots in our testing were all made of stainless steel with an aluminum core. Aluminum conducts heat very well and ensures more even cooking and fewer hot spots. The aluminum core also makes the bottom of the pot thicker, which reduces scorching. The lighter pots (including those without aluminum cores) did a fine job cooking corn and pasta--in fact, they heat up faster than the more even-heating pots with aluminum cores. But for cooking applications where sticking and scorching are risks (such as chili), a heavier pot is a must.

GET A GRIP: Handles matter-a lot. We found that the best handles extend from the pot at least 13_4 inches and are either flat or thick and round, for easy gripping. The All-Clad, Cuisinart, Lincoln, and Arcosteel pots had the best handles-they were easy to grip, even with potholders and a pot full of steaming chili. Pots made by Vollrath and Farberware performed well in cooking tests but were severely downgraded because testers found their thin handles to be awkward and poorly designed.

SUMMING UP: You can buy a solid, aluminum-core 12-quart stockpot (like the Cuisinart) for $65--or you can drop $325 on the beautiful All-Clad pot, which didn't have a single flaw. If you use a stockpot primarily to boil corn or pasta, it makes sense to buy the Cuisinart model and use the savings to upgrade something else in your kitchen. Whatever your price range, opt for a pot that feels heavy for its size. And when shopping, give the handles a test-run by picking up pots with potholders. The pots are listed, with comments, in order of preference. Highly Recommended

All-Clad Stainless 12-Quart Stock Pot

Comments: This pot was lauded for being "nice and heavy," with "easy-to-grip" handles that "didn't get too hot" (although we still needed potholders). The aluminum core runs up the side of the pot-other pots have aluminum cores only in the bottom, if anywhere--which ensures more even heating than most of us will ever need.

Cuisinart Chef's Classic Stainless 12-Quart Stock Pot
Price: $64.95
Material: stainless steel with aluminum core
Weight: 4.35 lb.
Comments: Very similar to the All-Clad pot, the Cuisinart comes with handles that are "easily grippable" and "sit well in your hand." The upward tilt of the handles made it especially easy to pour out the contents. This pot was also praised for being "plenty heavy," and the bottom was pristine after cooking the chili.

Lincoln Foodservice Wear-Ever Professional Series 12-Quart Stock Pot
Price: $59.90 (with lid, which must be purchased separately)
Material: aluminum
Weight: 3.85 lb.
Comments: This all-aluminum pot fared well in the test kitchen. Testers loved its "light weight," "solid feel," and "sturdy raised handles," which made handling and pouring easy. Aluminum is not as durable as stainless steel, which may lead to problems down the road.

Comments: This pot heated relatively evenly-there was only a tiny patch of chili stuck after 21/2 hours of cooking. The handles are "sturdy" and offer "good control," but this pot was downgraded for dangerous bare spots (no silicone) on the handles.

Farberware Classic Series Stainless Steel 12-Quart Stock Pot
Price: $70.95
Material: stainless steel with aluminum core
Weight: 4.5 lb.
Comments: With better handles (these were deemed "uncomfortable" and "slippery"), this heavy aluminum-core pot would have been in the "recommended" category. It heated very evenly, and testers liked how the lip of the lid "caught a lot of condensation."

Vollrath Stainless Intrigue Professional Cookware
12-Quart Stock Pot

Comments: This tall and narrow pot "felt tippy" and "cumbersome" and was "harder to pour" and clean than squatter pots. It did, however, cook with very even heat and was the heaviest of all the pots we tested.

All-Clad Stainless-Steel Braiser Review

All-Clad Stainless-Steel BraiserI have several all clad pans and they are all nicely built and work great, including this one.I am giving this pan only 3 stars mainly because I don't think the design is very good.I see several people have left good reviews but for the life of me I find very little reason to ever us this pan.

I should premise that I bought this pan to replace an old revere type skillet my wife has had forever.I use this old pan all the time.It is 12" diameter at the top and has rounded sides (rather than splayed)like the new all clad french skillets.OK, back to this pan, so I splurge for it.Upon 1st inspection, the bottom surface area on this 13" braiser is the exact same as my old 12" cheap skillet.In other words, the sides on this thing are splayedso dramatically that you're losing an entire inch of surface area on the bottom of the pan.OK, wells that's good for frying I guess but I never fry with this, the sides are low and grease gets everywhere and I don't feel like screwing around with a splatter screen every time I want to brown 6 chicken thighs.

If I want to brown and then braise 6-8 pieces of chicken, or beef for a french stew, I always end up using my le creuset dutch oven.If I poach salmon I always grab the cheap 12" skillet.If I make risotto I use the cheap skillet.If I make any type of pasta sauce and then finish with the pasta in the pan I use the cheap skillet since the sides are a smidge higher.For me, the only actual regular use this pan gets is as a glorified roaster for a whole chicken, something I do 5-10 times a year.

I don't want to make is sound like I have a personal vendetta against this pan, but I'm just not impressed with the design and I would not buy it again.You get a small cooking surface area with a large storage space requirement.Ask yourself what you are going to use it for.You can get a decent roasting pan for $40.(who cares if it's tri-ply when you're roasting, if you need to make gravy afterwards just pour the juices in a saucier or saucepan)IMO, the new all clad french skillet design is nicer.I bought my 13" braiser before they were on the market so I didn't have that option to consider, but I probably would've gone that route.Too bad they didn't make a 12" french skillet, until someone does, I'll still be using my old one.

Ravenscroft Crystal Amplifier Cabernet Glass, Set of 4I own a variety of Wine stems from a few makers including some of the "Finest" in the industry from higly regarded makers such as Riedel. And a fair number of other collectible fine crystal items.
Further, I have sampled many other fine wine stems on various occasions.

Arguably, Riedel is considered one of the finest for glass stems and a high benchmark standard in the industry. And I can't argue. I think they produce a fine product and I have been happy with the Riedel crystal I own.
However, Riedel's truly nice stems are VERY expensive.

I recently came across some very positive reviews of Ravenscroft's products and was very interested in the design of the Amplifier Cabernet.

I had recently sampled some fine red wines in a similar design with a large bowl that tapered to a smaller rim.
The design is highly effective at focusing the bouquet of the wine which adds a noticeable added level of enjoyment and appreciation when drinking a nice wine.

I could not find ANY retailer in the Houston, Texas area that carries the Ravenscroft line.

So, I ordered a set of 4 of the Ravenscroft Amplifier Cabernet stems.

As soon as they arrived and I removed from the well packaged box, I was instantly blown away.

The glass is quite light and delicate, but very "fine" and just SEXY - GORGEOUS!

Ravenscroft advertizes the benefits of using lead-free crystal - Claiming that lead can often leach into your drinks - which is hazardous and affects the flavor.

I honestly don't know about that - maybe so.
I have always been under the impression that leaded crystal was considered the finest. However, after receiving the Ravenscroft Amplifier Cabernet, I can personally say that Ravenscroft's crystal seems EVERY BIT as fine as some of my finest leaded crystal and in many cases the Ravenscroft crystal seems much nicer overall.

Quality of "crystal" aside, I also feel Ravenscroft's quality of craftsmanship was at among the highest I have seen for wine stems. And again, I find this Amplifier Cabernet stem to be one of the nicest wine stems I have come across AND easily my favorite for drinking out of.

Compared to MANY wine stems I have used over the years, in my opinion, the Ravenscroft Amplifier Cabernet stem is significantly superior in quality, shape and over-all presentation of itself AND of wine.

While Riedel may still be a very worthy "Benchmark" in the industry, I am INSTANTLY blown away by this product from Ravenscroft and compared to the best wine stems I have seen in the industry including the finest pieces from Riedel. I am familiar with Riedel's Sommeliers, Vitas, Vinum, Vinum Extreme and similar lines. In my opinion, only the Vitis and Sommeliers series "might" compare in quality, but I consider Ravenscroft:

*As nice in quality as the "finest" I have seen and handled from other makers,
*BETTER designs than most I have seen with the Amplifier Cabernet becoming an instant "FAVORITE"!,
*And a MUCH better value compared to other comparable quality stems.

I honestly wouldn't pay the high prices for Riedel's Vitis and Sommeliers level stems.
Ravenscroft offers at least as nice and in many ways NICER product than Reidel's highest priced lines (Vitis and Sommeliers) and at a price less than even the Vinum Series - with Ravenscroft's stems being significantly nicer than Riedel's Vinum and Vinum Extreme series (in my opinion).I will MOST likely have to purchase more of these stems as gifts eventually.
I expect quite a few people to "Covet" mine.

The pictures do NOT do the glass justice. You really need to "Experience" the glass to fully appreciate!

All-Clad Copper-Core SauciersI have had this pan for almost a year now and I have been very impressed with its performance.It was my first piece of All Clad and I bought it because I wanted a copper pan with the maintenance ease of stainless steel.I was a bit skeptical that it would have the same temperature response that a regular copper pan has, but I'm pleased to report that it does.I can take liquids from a roiling boil down to a non-boil and back again literally instantaneously by turning the burner knob (I have a gas stove)-- the pan is that responsive.Also, the heat is conducted uniformly all the way up the sides -- you can put your finger along the top edge of the exposed copper sandwich and feel the heat transferred immediately when you turn on the burner. Since it is so responsive, you generally need to use a lower heat setting than with a regular aluminum/stainless pan or food will burn. This pan is a joy to cook with -- the shape is like a flat bottomed mixing bowl and is great for rice pilaf, lentils, and small sautes.It is well balanced and light weight enough to do real saute cooking where you toss and flip the ingredients in the pan -- and the higher sides prevent the food from inadvertently escaping. It is relatively easy to clean, although rice and lentils will leave a residue which requires Bar Keepers Friend cleanser to completely remove. Also, the exposed copper will become tarnished from heat and steam, but it is easy to clean with the cleanser. Overall, I am extremely pleased with this purchase and would recommend the Copper Core line to anyone wanting the performance of copper cookware.
