All-Clad Copper-Core SauciersI have had this pan for almost a year now and I have been very impressed with its performance.It was my first piece of All Clad and I bought it because I wanted a copper pan with the maintenance ease of stainless steel.I was a bit skeptical that it would have the same temperature response that a regular copper pan has, but I'm pleased to report that it does.I can take liquids from a roiling boil down to a non-boil and back again literally instantaneously by turning the burner knob (I have a gas stove)-- the pan is that responsive.Also, the heat is conducted uniformly all the way up the sides -- you can put your finger along the top edge of the exposed copper sandwich and feel the heat transferred immediately when you turn on the burner. Since it is so responsive, you generally need to use a lower heat setting than with a regular aluminum/stainless pan or food will burn. This pan is a joy to cook with -- the shape is like a flat bottomed mixing bowl and is great for rice pilaf, lentils, and small sautes.It is well balanced and light weight enough to do real saute cooking where you toss and flip the ingredients in the pan -- and the higher sides prevent the food from inadvertently escaping. It is relatively easy to clean, although rice and lentils will leave a residue which requires Bar Keepers Friend cleanser to completely remove. Also, the exposed copper will become tarnished from heat and steam, but it is easy to clean with the cleanser. Overall, I am extremely pleased with this purchase and would recommend the Copper Core line to anyone wanting the performance of copper cookware.

Revere Traditions 3-Quart Saucepan with LidWhen I ordered this saucepan, I didn't realize how high the quality would be.When I opened the box and first lifted the saucepan, I was immediately impressed with the weight and quality.Each time that I use this pan to heat up foods, I am constantly surprised at how much less time it takes for those foods to cook.Water boils very quickly.Lastly, the engraved measuring lines for liquids areextremely helpful.All in all, the best saucepan that I've owned.

All-Clad Copper Core 1-Quart Saucier Pan Review

All-Clad Copper Core 1-Quart Saucier PanI'm not 100% convinced that the copper core is worth the premium price tag when the aluminum core Master Chef line performs about as admirably in terms of evenness of heating, but this one was in stock and the other one wasn't, so the choice was simple.

It's a tiny little guy, but a solid performer. It came up to temperature quickly, and my infrared thermometer showed the sides staying within 5-10 degrees of the bottom at all times with no significant hot or cold spots anywhere. I elected to prepare a very simple dish--Farina with coconut milk and palm sugar--for its maiden voyage, and it cooked well without any scorching at all. I actually had a hard time telling when it was done because of the complete absence of bubbles--something I'm used to seeing with my old pan which has hot spots a'plenty.

Some people have complained that All-Clad's 1-quart sauciers are off balance and easy to tip. While a bit of pressure on the end of the handle will indeed lift the front off the range by about an inch, you'd really have to knock it pretty hard to actually slosh anything out of it, and every other similarly sized pan I've ever tried exhibited identical behavior. It absolutely does not wobble around of its own accord and I wouldn't worry about it tipping any more than any other pan you might own.

My only real gripe is the handle. I hate all of All-Clad's handles; they're not only uncomfortable, they actually hurt. Using a towel mitigates this somewhat, but the whole point of the stay-cool riveted handle is to eliminate the need for such measures. This one loses extra points because the rivets are simply too large for a pan this size. They jut out way too far and make both stirring and scraping down the sides a tedious, noisy affair. A minor annoyance, but an annoyance nonetheless.

All in all, it's a great pan and it runs circles around the old Calphalon pile of junk it's replacing. It's also made in America and boasts a lifetime warranty, so if you ever manage to stir your way down through to that precious copper, you'll get a new one. Just make sure you realize there is NO LID for this model; gotta step up to the 2-Quart for that.

P.S. DO NOT ATTEMPT TO DEEP FRY ANYTHING IN THIS PAN. I just had a late night falafel (yes, I know that falafel is not a sauce) preparing incident and while the pan performed as admirably as ever, the fact that the sides conduct so much heat means that all the oil splatter that would ordinarily just kinda sit there until you washed it off BAKES onto the surface. It's not ruined or anything, but man what a lot of scrubbing.

All-Clad Copper Core 4-Quart Saucepan with Lid Review

All-Clad Copper Core 4-Quart Saucepan with LidOver the years I have used a variety of cookware--aluminum bottomed stainless Revere Ware, Magnalite Professional, Calphalon, Calphalon Professional NonStick. When I finally had to throw out the last of my tattered collection, I started to look for some stainless cookware that would stand the test of time and offer performance to boot. I decided to splurge on this All-Clad Copper Core.

One of the pieces I recieved was this 4-Quart saucepan. I love to use this to cook pasta for two, and it's the perfet size for making stock with one chicken carcass or a risotto for several. Love this pot!

Delighted to report that I am THRILLED with this expensive splurge! All-Clad is NOT about expensive hype and status, those these pans are beautifully made, instead they do everything cookware should, and have literally changed the way I cook. Having attended CIA and worked as a professional chef for a few years, I know the golden rule for food not sticking: preheat pan, add oil, let oil heat for 5-10 seconds, then add food. Using these guidelines with the Copper Core, nothing sticks! And I mean for some things, like omelets or fried eggs in the 10" frypan, the performance is as good as my brand new Calphalon NonStick was; when you can just slide omelets and fried eggs out of the pan without ANY sticking at all, why would you ever need Nonstick or Teflon based products?!

However, these pans are also superbly capable of developing a fond on the pan bottom for deglazing and subsequent sauces; in fact I have had them give every last bit of the fond up when deglazed, almost cleaning the pan for me! That's the best thing about them--they do everything right. I am not sure if it's All-Clad propriety stainless "recipe" or what, but these pans are so amazing to be able to function on all levels from eggs sliding out with ZILCH sticking to chicken breasts sticking just enough to develop rich fond for complete deglazing, to the light and glazy fond from sauteed onions and garlic for developing a richer risotto when deglazed with wine.

Mind you, this is partly about knowing some basic cooking principles, and these pans might not act so obligingly in non experienced hands, because when I read about people commenting on how everything sticks in their All-Clad stainless interior, I know it isn't All-Clad's fault, believe me!

I have found the copper core very responsive and quick to adjust to temperature. Perhaps not as great as true copper pot and pans, but noticeably better than aluminum cores (Stainless line) or anodized aluminum (Magnalite Pro/Calphalon). These pans heat up and boil water faster than anything I have ever used, aside from true copper cookware, and when turning the heat down, or removing from burner, they also cool incredibly quickly. It's nice to have semi-copper performance with the ease of stainless steel clean-up. And this cookware does clean-up quickly and easily, particularly when using Barkeepers Friend. I use plastic and wooden utensils (no metal) and they still look almost brand new after several months.

The copper band however does tarnish and discolor just as much and just as fast as a true copper pot or pan, so if you are fanatic, you will need to polish the tarnish away fairly often (at least every other week). However this is barely noticeable for us real world users, and Barkeepers friend does a good job of semi-polishing the copper (but it won't gleam).

I know, I know, they are SO expensive. But honestly, if you know how to cook or want to learn with responsive cookware, I honestly feel this is a great investment. I am wholeheartedly thrilled that I made it and cannot recommend highly enough.

Revere 2000 Line 3-Quart Covered Saucepan Review

Revere 2000 Line 3-Quart Covered SaucepanI was looking for another 3-quart saucepan to replace the Revere Ware 3-qt saucepan that was left on the stove too long and I could not get the burnt-on rice completely off the inside bottom of the pan, even after days of scrubbing and using many different forms of cleaning techniques and scrubbies (any suggestions on another method, please let me know).
Now about this 3-qt. Saucepan:
When it arrived, I was at first surprized by how light in weight the package was.When I opened up the inner Revere Ware box, the pan looked similar to the original I bought 15 years ago which was then made in the USA.I turned the saucepan over and it says:"3qt/2.85 L. REVERE WARE e07S INDONESIA".Indonesia?I knew then why it was so much lighter in weight than the Revere Ware I purchased 15 yrs ago.This appears to be another example of a US company moving to a more cost-effective production site overseas;though obviously the product is inferior in quality, compared to what was made by Revere Ware USA.I write this so that you are aware before you buy this product, that if you are expecting it to be the same as Revere Ware made in the USA, you will be sadly disappointed as I was.I will say it was packed well, arrived in a timely manner, and is very shiny.I used it tonight to cook part of our dinner, and I will say, it did a good job, but, if you want a good quality-built pan, you may try All-Clad or Gourmet Standard Tri-Ply as recommended by America's Test Kitchen Equipment Corner.

Revere 3514027 2-Quart Covered Saucepan Review

Revere 3514027 2-Quart Covered SaucepanI fondly remember growing up with Revere cookware during the '50s and '60s.It was sturdy and manufactured with care to precise measurements.Unfortunately, this is NOT the same product.Apparently, Revere cookware is now being manufactured in some third-world dumpster.The overall construction is flimsy; it bends and dents easily.None of the lids fit properly.The unreasonably thin "copper-cladding" was unevenly applied and looks like a roller-coaster ride around the sides of the saucepans.Revere needs to clean-up its act, or go out-of-business.
