Sitram Catering 3.8 Quart Commercial Stainless Steel Saute Pan Review

Sitram Catering 3.8 Quart Commercial Stainless Steel Saute PanI have had this pan for a year or more. I have a non-stick Emrilware pan of almost identical dimensions that has been my mainstay for several years.I bought this pan to use when I want a better sear than you can get with non-stick.

One reason I selected the Sitram is it is made in France which suggested a well thought-out design.However the multi-layer bottom of the pan does not extend up the sides.I realized this before I bought the pan but didn't think it would be much of a problem, but it has been.The relatively thin sides of the pan curve around the outer edge of the bottom before they meet the multi-layer section.This results in a tendency for scorched or burnt food at the outer edge, especially when cooking at high heat. (I have a gas stove.)

The workmanship of the pan is good.The heat distribution across the multi-layer section is good, the problem is only at the outer edge.Overall this is not a bad product, but the design adds a challenge to using it. I wouldn't buy this pan again for this reason.

A few hints for using stainless in searing I had to learn the hard way.The cooking surface must be spotless to the point of being shiny.Simple clean-up with soap and water won't accomplish this.I have found that a lot of elbow grease with Bar-Tenders Friend is what works.That, and adding the oil or cooking fat to the pan after the pan is hot, and not trying to move whatever you are trying to sear until the pan is ready to release it, seem to be the keys.Hope this will save someone a ruined meal or two.

Cuisinart MultiClad Pro Saute Pan Review

Cuisinart MultiClad Pro Saute PanI think this cookware is a really great alternative to All Clad Stainless. I have three pieces of the Cuisinart Multiclad and they are all comparable to the All Clad in terms of performance. Careful - you have to take care of these pans. Don't put salt in them unless there is boiling liquid or the pans will pit and I wouldn't recommend putting them in the dishwasher. Another comparable line is the Calphalon Tri-Ply.

Cuisinart Chef's Classic Saute PansThis Cuisinart Chef's Classic saute pan has quickly become my favorite pan. It's huge - a full 12" across - which makes it very versatile. The pan conducts heat extremely well and is oven safe to 500 degrees. The handle is very sturdy, reasonably comfortable, and stays cool (outside of the oven, of course). The lid fits tightly. Both the interior and the exterior are very shiny and attractive. All this and it's easy to clean. Yet this pan sells for just a fraction of the sexier brands like All-Clad or Calphalon.
The chief reason for the great price is due to the construction. This is known as a "disk bottom" pan because it has a highly conductive aluminum disk embedded in its base. The really expensive brands feature "cladding", where a layer of conductive metal (usually aluminum) is embedded throughout the entire pan. Although the cookware industry loves to say that disk-bottom pans are inferior, test after test proves this claim is untrue. After all, we don't cook on the sides of a pan; we only cook on the bottom. See Cook's Illustrated magazine, May/June 2003, for a great discussion of this.
There are a few reasons why this pan might not be right for you. This pan's size makes it fairly heavy, so if you have arthritis or weak hands, you might want to opt for a smaller pan. Similarly, this pan might not fit on those tiny stovetops or ranges that you sometimes see in "galley" kitchens in apartments. But if you want a large, durable, high-quality saute pan at a fraction of the cost of the big-name brands, this is the pan for you.

Emeril Stainless Steel Saute Pan Review

Emeril Stainless Steel Saute PanI did quite a bit of research about pan types prior to getting this one.It came highly rated from CR and [...].I've only ever owned nonstick (anodized) before this and of course as with many, the non-stick coating gives up the ghost within about 3 yr.The promise here is that stainless will last nearly as long as cast iron without all of the worries about how to clean it.As recommended, I've used only low to med-heat and only cooked foods that generate their own non-stick (meats, poultry).I've never been able to deglaze before with non-stick - this is pretty cool!Yes, if you're used to non-stick there is quite a bit more that gets stuck to the bottom of the pan (but I've been pretty good about letting it preheat 5 min before putting anything in).But, if you follow the included cleaning instructions (although they appear to be generically written, not just for stainless) it comes mostly clean.I can always make out where the meat was sitting.Then I toss a little barkeeper's friend in there, and BAM (sorry Emeril!) as good as new. Plus, I can cut food up while it's in the pan... try that with non-stick!I've only had it about a month and noted a little discoloration on the bit of copper that is visible on the bottom.But I'm not too worried about discoloration, just performance, and it works great.Of course, if it still works a year from now, I'll get back on here and put another review in.
