Cuisinart Chef's Classic Nonstick Bakeware 9 inch Springform PanI am not a big baker but I thought I would start with these pans. So far, they have worked great. The batter does not leak our, the cakes do not stick, and they come right out of the pan when you open them up.

A nice alternative to standard cake pans, this 9-inch springform pan makes it easy to create delicious cheesecakes, as well as other special desserts like layer cakes and tortes. When the cake has finished baking, just open the latch to release and gently lift the 3-inch-tall sides straight up and away from the perfectly intact cake. To transfer the confection to a serving plate, just slide it right off its base.
As part of Cuisinart's Chef's Classic Nonstick Bakeware line, the pan features heavy-gauge (1.0 mm) aluminized-steel construction for fast, thorough heat distribution and even browning, as well as a durable Whitford Xylan nonstick coating (both inside and out) to ensure that a graham-cracker crust sticks to the cream-cheese filling, not to the side of the pan. It's best not to cut the cake in the pan, though--use only wood, nylon, rubber, or plastic tools to avoid scratching the surface. Oven-safe, the cookware features extra-thick rolled edges to prevent it from warping, even at high temperatures. Best of all, the cookware cleans up easily by hand or in the dishwasher-safe, and it carries a limited lifetime warranty.

Chicago Metallic Commercial 12-Cup Mini Cheese Cake PanMy dish for the holidays is always mini-cheesecakes.It was always frustrating to get them out of my mini-muffin pan.This pan has made it so easy!I no longer dread making this dessert.Just a note though... the cups on this pan are approx twice as big as a regular mini-muffin pan so adjust your recipe accordingly.I just double my recipe and get bigger mini-cheesecakes.I don't think anyone will mind.

Parrish Magic Line 10 Inch Aluminum Cheesecake PansThese pans are great for baking cheesecakes.I have a collection of these, many of which were leftover from making my own wedding cheesecake.I once did a side-by-side comparison, baking one cheesecake in a Magic Line pan and one in a springform pan.The cheesecake baked in a springform pan browned more on the sides and was harder to remove from the pan.The cheesecake baked in a Magic Line pan was prettier and appeared to have baked more evenly (also easier to remove from the pan, just place on a large can and gently pull the pan sides down).So I disposed of my springform pans and came to Amazon to buy more sizes of Magic Line cheesecake pans.

These cheesecake pans do not leak batter out, although it is not safe to bake in a waterbath without wrapping the pan with two layers of foil.I have had water seep in and make my crust soggy when I only used one layer of foil and baked in a water bath.I have successfully baked regular cakes in these pans as well.
