
2 year follow up:
I knocked it down a star because the blade didn't hold up well under frequent use. It is only sharpened on one side which means the cutting edge is very thin (20 degrees?). There were so many nicks (gouges) in the blade it took over an hour to clean up with a diamond stone. We have used a Henkels chefs knife every day for years and it has held up much better. With the thin blade the Global is very sharp but works well for Sushi and soft fruit only.
