KitchenAid Gourmet Essentials Hard-Anodized Nonstick 11-Piece Cookware SetI never write reviews, but this set has inspired me.It looks great, heats up fast, cooks evenly, and is the best non-stick I've ever used.I've just ordered a second set for my summer home.The set offers an excellent range of cookware.(The only thing I've added is an 8" skillet.)I'm surprised to discover that I don't mind washing it by hand, since it's so easy to wash (one swipe, which I used to have to do before I put my old pots in the dishwasher).The stay-cool rubber handles are great: coolness without looking cheap.The glass lids are also wonderful: nice for seeing what's in the pot and very easy to clean.I used to have Calphalon, and it quickly became discolored, got things permanently stuck to it, began to look terrible (I finally gave it away).I thought seriously about Le Creuset, but finally decided against it (cost, weight, not really non-stick) and am glad I did.Caveat: I'm not an extremely refined cook, so have no idea how well this would perform in very high-end cooking, but I'm *very* happy with it.

Berndes 9 Piece SignoCast Cast Aluminum Cookware Set Review

Berndes 9 Piece SignoCast Cast Aluminum Cookware SetI got this in a Gold Box deal. Not bad overall for the price. I've been using them for a few months now, and the non-stick coating still looks good. Not perfect, but still good--a few scratches here and there, and an overall dulling of the new shine of the non-stick coating. The aluminum, however, has discolored, which is pretty normal.

They cook fairly evenly, but without the density and heft of something like cast iron, they don't retain heat in quite the same way.

Consumer Reports rated this line #5, with the [...] brand being both the best non-stick set and a best buy (more pieces for the same price). The lowest score was for the durability of the non-stick coating (which I can attest to); the highest score was for the ease of cleaning, which to me doesn't make much of a difference.

Finally, the handles come loose pretty easily. Just need to tighten them up with a screwdriver, but still, I wish they were a bit more solid.

I don't normally rate something five stars unless I really, really love the product and would buy it again. I think I'll be likely to try another line of cookware for my next purchase, to be honest.

Oh, in general, watch out for shill reviews. Things to look out for--people with only one review, reviews that say nothing negative, reviews that give five stars, and reviews that all occur around the same time.

Berndes Nonstick Milestone 7 Piece Set Review

Berndes Nonstick Milestone 7 Piece SetI like the brand and I like the set and I liked the price. The problem is that the set arrived scratched. I kept my second set because there were just a few scratches compare to the first set I received from Amazon. I give Amazon all the credit of the world of how fast they reacted when I called for a replacement.

The first set arrived all scratched inside of the fry pan and 7-quart covered stockpot. I called Amazon back and Amazon send a UPS call tag to pick them up right away and at the same time shipped out a new shipment the following day. When I got my second set 4 days later, only the Fry pan still had some minor scratches, however, we decided to keep because of the deal and who knows how the third set will be when it arrives. Me and my wife has came with the conclusion that the problem on the scratches is with their packaging. I believe either Amazon or Berndes will solve this problem with some bubble wraps filling the empty spots...

Anolon Advanced 12-Inch Open French Skillet Review

Anolon Advanced 12 inch Open French SkilletI don't like non-stick.It's not as versatile as good 3-ply stainless steel and it doesn't last anywhere near as long. That said, I do like egg dishes and in the summer I like dishes w/ a lighter mouth-feel (not as much oil). So I set out for the best non-stick pan.

I got a 12-inch pan because I've had 10 inch and 8 inch pans in the past and they get crowded very easily. Secondly, I wanted a pan w/ a riveted handle and a decent high temp oven performance. Also, I believe the true mark of a nonstick pan is the 'flip' performance-- so, NO HELPER HANDLE IS THE WAY TO GO! That's just my opinion. I eventually narrowed by search to 3 brands: Caphalon, All Clad, and Analon.Caphalon because they had some interesting non-stick options, All Clad because it's just the best, and Analon because I currently use their stainless set and for the last 2 years I've been very happy.

So All Clad was knocked out of contention quickly for the simple reason that ALL NON-STICK PANS DEGRADE over time. And from what I've read, their best non-stick pan will loose it's luster in about 2 years. That's not to say that I think the pan would be completely crap after 2 years-- just that i think the degradation curve would start to accelerate into the replacement zone. So why pay $130-190 for a pan over two years when you could use 2 average non-stick pans at the same price over two years and have more 'quality' non-stick time to boot?

With All Clad out of the way I turned my attention to Caphalon. I still didn't want a 'cheap' pan though... just not ridiculously over-priced one (although I would love to replace my analon ss set w/ an all-clad one in about 5 more years-- saving those pennies...).Caphalon has 'professional', 'commercial', 'contemporary', and 'one' series pans. Professional pan reviews peg it as a loser. 'One' series pans are just a bad idea all around... why would anyone want a pan that's permanently sorta-non-stick-but-not-really? 'Contemporary' pissed me off (yes I was actually offended) with it's strange 'bulge flare' near the rim-- you really have to see it to understand what I'm talking about. So I considered the commercial series.

Anolon was my last consideration. I looked at their titanium series in the past, but ultimately went with the SS set (glad I did). I was very concerned about the silicon handles. Mainly because it's a limiter to broiling temps, but I gotta say I've been pleasantly surprised. They do add a very good handling feel to the cookware and the silicon hasn't discoloured or peeled or scraped off anywhere.I totally expected the silicon to wear out and it hasn't.Also, their metal ply is just as even and weighted as the all clad stuff.Same thickness, very similar shape, and from the durability I've experienced I'd be surprised if all-clad is really all that much better... but from the looks of it I would have to comment on that about 7 years into ownership. So I was definitely going to consider Anolon.

Went to the store, felt the surface of the commercial caphalon and it was ROUGH. I know it's commercial and they say you can use metal utensils, but something is just counter-intuitive about a 'rough' non-stick surface. It was priced at $50. Then I checked the Anolon Advanced pan. Nice and smooth. Also it had the same handle as my Anolon SS set and the capholon had one of those slightly loose, thick silicon handle... uhhh... condoms.Also the packaging on the commercial pan is sparse-- consisting of a strip of cardboard w/ logo and writing and the sides of the pan exposed to the elements. When they ship them they're stacked on top of each other and the Anodized aluminum bottom from one pan constantly rubs the top rim of the pan below.I couldn't find a single pan out of the 8 on the racks, that didn't have scuffing around the rim from distributor shipping.Needless to say the Caphalon Commercial pan was OUT and the individually completely boxed, wrapped in plastic, suspended in a cardboard brace Anolon Advance pan won the day.

I was very curios about this Dupont Autograph 2 thing. Aparently the Non-stick is on the inside of the pan and seamlessly wraps over the edge and all the way down the outside until the very bottom of the pan where the Anodized Aluminum bottom makes contact w/ the burner. I don't know if it actually does anything functional, but it's VERY easy to clean. I guess maybe it keeps food from 'catching' around the rim when stirring vigorously or 'flipping' veggies in a sauté. So far the non-stick surface is PERFECT.About 20 seconds of soap, sponge, and hot water is all that is need to clean inside and out (thank you to the wrap-around nonstick surface). It has a very good weight so the heat distribution is great even around the sides.I've become accustomed to 'flipping' with my stainless pans so when I first tried it with this pan I accidentally sky-rocketed the veggies into the ventilation hood.As with temperature and handling with all new pans, it's good to keep in mind 'baby-steps'.

Cuisinart Chef's Classic Fry PansThis pan, like all the Cuisinart pans, is my favorite to use when I need a 12" skillet.It's a heavy-duty even-heating pan like it's "sisters and brothers"!If you already have any Chef's Classic pots or pans, the lid that fits on any pan with item number ending in 30 will fit on this pan.(Item number is on the bottom).With all the Chef's Classic pans, you usually don't have to turn the heat up as high as a cheapy pan; instead of high, use medium-high, for example.Since this does not have a non-stick coating, you'll often need oil for cooking.Here's a tip: hot pan, cold oil.Let the pan heat up before adding the oil.Also, these pans heat up FAST so watch your food!If anything gets burned-on badly, the pans just need a little soaking (maybe an hour, not overnight).Or, add water to the pan and "boil" the burned-on food off.I also use Barkeepers Friend cleaner to keep them shiny and looking new!Take note: if you've ever purchased a set of Cuisinart from a discount warehouse (i.e. Sam's Club, Cosco) there are not individual pans available that will match your set exactly.I called Cuisinart and found out that particular pan style is available only in sets from discount warehouses.BUT, the Chef's Classic line matches very closely, it's the closest match available.

Swiss Diamond Cast-Aluminum Nonstick 8 inch Fry Pan with LidOver the years, my wife and I have tried all sorts of cookware. We have a good set of Calphalon stainless-steel cookware, but we've never mastered the art of cooking sticky dishes such as eggs without a non-stick pan. We've tried every type of non-stick pan we've encountered. Some are non-stick for a short time only before the surface gets mucked up. Our best Teflon pans, such as those by Calphalon, seem to remain non-stick for a very long time with careful cleaning, but recently we've learned that when heated, Teflon (PFOA) cookware outgases chemicals that are definitely not good for you. (An advisory committee has recommended that the EPA classify PFOA as a possible carcinogen.)

Swiss Diamond is PFOA-free and fantastically non-stick. We've used our two skillets extensively to cook eggs and to brown meat, and they look and work like new. Nothing sticks. Omelets are easy to prepare. Cleanup is a breeze. The lids have vents that can be opened or closed, a useful feature. The manufacturer says you can use metal utensils, but we've stuck with plastic, so I can't say how they'll hold up to contact with metal. I can't recommend Swiss Diamond cookware too highly. It is the stuff I've been looking for for decades.

Swiss Diamond Cast-Aluminum Nonstick 12-1/2-Inch Fry Pan Review

Swiss Diamond Cast-Aluminum Nonstick 12-1/2 inch Fry PanI have been looking for a good non-stick skillet. I've used non-stick skillets from All-Clad and Calphalon but they all had one problem: peeling of the non-stick layer. I saw an unused All-Clad skillet from their new line at Williams-Sonoma and it had scratches on the non-stick surface.

I found what I was looking for! This fry pan is excellent! It is made in Switzerland. It is big. The outside diameter is 13" and the bottom is almost 9 3/4". It requires a large burner. I have a Miele electric cooktop which has a burner large enough for this skillet. I have tried it over a smaller burner and it worked as well. The food browned evenly over the surface of the skillet. The cleaning is easy. I only have a small issue with the lid. The lid assembly was easy. However, during washing water gets into the steam vent and then it comes out after the lid is dried. It takes few drying sweeps to avoid water streaks on the lid.

Overall, I am very pleased with this skillet. I am looking forward to getting more skillets from Swiss Diamond.

Update. May 2009. Zero stars.
Like its predecessors from All-Clad and Calphalon, this skillet stopped being non-stick after about a year. It wasn't abused in any way: no metal utensils and no prolonged cooking of foods other than pancakes and fish. Yet, the center of the skillet began to darken first, than the rest of the skillet has darkened. I used baking soda (suggested by All-Clad website). It did remove some brown residue but the skillet is completely not non-stick, everything sticks to it even more.

I am happy with a non-stick skillet from Circulon infinite line. I bought an 11" skillet at Macy's for $20 as a product promotion item. The best non-stick that I have is from LeCreuset. Unfortunately, the largest one LeCreuset made was 9" in diameter.
