I have to say that having NEVER used this kind of cookware (i.e. anodized aluminum) before, my first experience making my old favorite pan-fried chicken breast was very positive.I have read several very negative reviews saying that these pans stick too much.However, I was under the impression that this is NOT a non-stick pan (they do have a separate non-stick version of it) so I was not expecting a completely non-stick experience.
It did stick a little bit (not as much as some of the reviewers have claimed) but the deglazing process was a breeze (even with a PLASTIC spatula!) and my husband said the cleanup was very easy.If you are a better-than-average cook and want to take a step up to a professional pan, definitely buy this one.
My pan also came with a DVD with a very good instructional video on how to sear, saute, and pan-fry, which I had not yet watched before I made my chicken.Next time I will change my method slightly to improve my technique.
This pan replaced a previously-owned 5-quart Calphalon non-stick saute pan which I used almost daily for several years and was way beyond the end of it's life (hey at this price you want to squeeze every ounce of usefulness you can out of it).I wish I'd replaced it sooner.This pan is a dream.
