I bought a couple of sheets of this and trimmed them to the size of my cookie sheets.At first I only considered the benefits of saving money over endless rolls of parchment and reducing waste.It has a couple of unexpected benefits as well.For one, you only have to cut it to size once (so if you have pans of different sizes you want to use this with, buy enough for all sizes).Secondly, it lies flat on the pan.Anyone who's worked with rolls of parchment knows the frustration of trying to get it to tear evenly from the roll.Then it curls up when you try to line your baking sheet with it.Not so with this stuff.
It's very easy to clean, also.It's supposedly dishwasher safe, but it doesn't seem like it would stay put once the jets started.It's too light and flexible.I just soak it for a few seconds in warm sudsy water and rinse it off.Then I hang it over the oven door handle to dry.
One word of caution: Don't buy this thinking you can fold it up like you would to make fish en papillote.It doesn't hold a crease well enough for that.Besides, for baking fish, I prefer to use something disposable.
