I own very few non-stick coated pots or pans - I'm big on stainless and cast iron for most of my requirements. But non-stick is the ANSWER for omelettes, fried eggs, and light frying. Features that are important are thicker/heavier aluminum ware to prevent warping; a rounded form to encourage omelettes on their way to the breakfast plates. Although I have a dedicated crepe pan, I could use this one quite adequately for double duty to knock out those delightful french 'pan cakes'.
