Fissler Original Pro Collection 3 Quart High SaucepanI have elsewhere reviewed the Fissler Original Pro Collection 2.8 Quart Casserole. My latest acquisition is this saucepan, although strictly speaking I am using the 2.5 litre (18cm) version available in the UK, Europe and Japan. After using it for several weeks, it seems to me that it has all the virtues of the casserole of the same series, which I have been using for a couple of years. The saucepan is extremely well built. When I am abroad I have a nasty habit of visiting local kitchen shops in my spare time and I have travelled widely around Europe, the US and Japan. I have ever seen anything, anywhere that feels quite as durable as Fissler cookware. That's a purely qualitative judgement, naturally, but that's the impression I have formed.

The pan has a handy measuring scale etched on the inner surface and there no rivets internally, which makes washing it a breeze. Food tends not to stick but any deposits come easily off the surface when scrubbed. It is heavy-bottomed and well suited to frying, stewing and simmering yet despite the heavyweight construction water also seems to boil quickly. In a pinch I have used it as a small casserole, straight from hob to oven. The lid imparts the same feeling of solidity as the pan itself. Handles on the pan and lid do, as promised, stay cool under normal use. Obviously if you use the pan on a gas flame that is too large for it you will end up with a hot handle.

In terms of size this pan is big enough for cooking portions for two people without crowding - soup, or a pasta sauce, for example. For more than that I think you would be better off getting a size up. Nevertheless, in our kitchen this is the size that we use the most and thus it has become one of our workhorses.

As for value, it seems to me to be a solid proposition. These pans look expensive but I fully expect all three of mine to last decades. I love Le Creuset cookware. My family has Le Creuset pans that are twenty years old, yet the Fissler pans have no enamel coating to worry about (metal utensils are fine) nor will they crack when dropped as Le Creuset can: I am convinced that the Fissler will last longer. $140 over 30 years is only $5 a year.

One warning: the handle of this saucepan is longer than for most saucepans I have used in this size. I assume this is to dissipate heat that might otherwise build up in the handle before the heat reaches the cook's hand. If you plan to pop yours in the oven then it might not fit if your oven is on the small side. It fits into mine, but it's worth thinking about.
